Клюкву можно использовать замороженную, свежую — в таком случае она будет кислее; или сушеную — тогда начинка будет слаще. Если заменить муку на цельно зерновую пшеничную, то маффины получатся пряными. Месить тесто лучше деревянной ложкой. При проверке готовности маффинов духовку нужно лишь слегка приоткрывать, но лучше смотреть в окошко. Проверить готовность можно легким нажатием на маффины — они должны пружинить. Можно украсить маффины стружкой белого шоколада — он хорошо сочетается с клюквой.

Куриное яйцо — 2 штуки
Пшеничная мука- 150 г
Молоко — 3 столовые ложки
Сахар — 150 г
Сливочное масло — 80 г
Клюква — 150 г
Ванилин — 1 чайная ложка
Сахарная пудра по вкусу
ПОШАГОВЫЙ РЕЦЕПТ ПРИГОТОВЛЕНИЯ
Разогреть духовку до 200 градусов.
Мягкое сливочное масло комнатной температуры хорошенько взбить (обычным миксером или миксером с насадками-веничками) с сахаром и с ванилином. Должна получиться пышная однородная масса.
Добавить к массе молоко и яица. Хорошо помешать.
Добавить муку и разрыхлитель.
Замесить тесто.
Вмешать в тесто ягоды.
Для готовки использовать тефлоновые формы для маффинов, в каждый отдел которой поместить бумажные или силиконовые формочки. В эти формы перекладывать тесто так, чтобы оставалось немного свободного места, то есть на 2/3 формы (тесто будет подниматься).
Выпекать 20 минут (зависит от особенностей духовки).
Выложить маффины на подготовленную поверхность (например, на решетку) остывать. Посыпать сахарной пудрой.
